  • Chocolate Banana Zucchini Bread

    Brown bananas and zucchini you have left over from you garden? What do you do with them?! How about a loaf of moist chocolatey delicious bread for your taste buds?!

    In a large bowl, whisk together the banana, sugar, eggs and oil.  In a separate bowl, whisk together flour, cacao powder, baking soda, cinnamon and salt. Add the dry ingredients to the wet until they are just combined. Fold in the zucchini and pour mixture into your baking pan. Top with pumpkin seeds.

    Cook the macaroni according to the instructions on the box.

    While the pasta cooks, slice the hot dogs into thin “coins.”

    Open cans of tomatoes and corn or beans, but do not drain.
    Combine the contents of the cans and the hot dog slices in a large pot, and bring to a simmer
    Break up the tomatoes into small chunks as the mixture heats.
    Drain the macaroni when it is barely al dente. Reserve the cooking water to add to the stew, if needed.
    Add the macaroni, and continue simmering until all of the ingredients are thoroughly heated and the hot dogs are cooked
