Stuffed Buffalo Chicken Celery Snacks

I love a good football party. Growing up, my family always threw down the BEST Superbowl parties. My mother was a master party planner and excellent cook. We’d have themed parties depending on which teams were playing and the food tables would be off the hook! Every variety of dip, chips, saucy crock pot creations, finger foods, chilis with more condiments than you could count and meat on a stick, in buns  or on the bone.

Now that I’m grown and throw my own football parties, I wanted to find a snack that would blend traditional tailgate party fare with something low carb and relatively healthy. Yeah, I know, football snacks aren’t supposed to be “healthy”, but imagine this – all of the flavor and zest of a buffalo chicken wing with the crispy crunchy snap of celery together as one! Enter, the stuffed celery buffalo chicken snack!

It’s easy to make and you will not have any left overs, trust me. Feel free to add your own variations. I like to add blue cheese crumbles or even chopped walnuts for an extra rich taste and texture.

Stuffed Buffalo Chicken Celery Snack

 

 

 

 

 

 

 

 

 

 

RECIPE

2 C. shredded chicken (use leftover chicken, rotisserie chicken or canned in a pinch)

¼ c. mayonnaise

1 tsp. garlic powder

½ tsp. salt

½ tsp. pepper

3 T. buffalo wing sauce

6 celery stalks cut in half or 1/3

Chopped chives or green onion for garnish

Mix the chicken, mayo, garlic powder, salt, pepper, buffalo wing sauce and anything else you wish to add (or not) together in a bowl.

Fill up your celery stalk pieces with the filling and garnish with chopped chives or green onions and serve! – Tracey Bartel
