Backyard Tomato Mozzarella Salad

There is nothing more lovely in my garden during the height of summer than a beautiful, ripe juicy brandy wine tomato! Not only are they pretty to look at but they taste amazingly delicious. Being a huge fan of the tomato, I usually grow a few different varieties. I love them all, so this salad is the perfect fit to showcase each of them in their ripened summer glory! The cheese adds creamy finesse and the dressing gives it some zing. Add other vegetables from your garden if you’d like or mix in some sweet balsamics with the standard. I love to add fig or apple cider balsamic. Takes things to another level! There’s no wrong way to eat this salad, so have fun and enjoy!
Backyard Tomato Mozzarella Salad
2 c. sliced or diced tomatoes any variety
1 ball fresh mozzarella cubed
1/4 red onion thinly sliced rings
Dressing
1 small garlic clove minced
2 T. olive oil
2 T. balsamic vinegar
1/2 T. red chili flakes
S & P to taste
Handful of fresh basil sliced chiffanade, chopped parsley, chives or any other fresh herb you like from your garden
Prepare your tomatoes, add mozzarella, onions and basil. Mix your dressing ingredients in a small bowl, whisk and pour over salad when ready to eat. Stir gently and serve!
