Strawberry Chia Jam

Ingredients
  

  • 2 cups strawberries trimmed (frozen or fresh)
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons maple syrup, or honey, or 1/8 of teaspoon or 6 drops stevia
  • Pinch of sea salt
  • 2 tablespoons chia seeds

Equipment

  • small saucepan
  • fork or potato masher
  • 1 jar or mason jar with lid

Method
 

  1. Place the strawberries, lemon juice, sweetener, and salt in a small saucepan over low heat.
  2. Cook, stirring occasionally, for 5 to 6 minutes, or until softened. Use a fork or a potato masher to mash the strawberries, leaving a few slightly chunky. If you prefer more puréed then use an immersion blender.
  3. Remove from the heat and stir in the chia seeds.
  4. Transfer to a jar and let cool, uncovered, at room temperature, then cover and chill in the fridge.
