  • 1 cup cottage cheese 4% or low-fat
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 teaspoon fine salt

Method
 

  1. Preheat the oven to 350°F. Lightly coat the cups of a silicone muffin pan with cooking spray.
  2. Blend the ingredients. In a blender, combine the eggs, cottage cheese, cheddar cheese, salt, and black pepper. Blend until smooth.
  3. Pour the egg mixture into the muffin cups, filling each cup about halfway. Top with chopped chives. You can also add optional mix-ins such as vegetables or cooked bacon.
  4. Bake for 20 to 22 minutes, or until the centers are set and slightly firm.
