The Ultimate Meatloaf Recipe

If you bring up the subject of meatloaf, EVERYONE has an opinion! My mom makes the best or naw, I don’t really like meatloaf, or this diner has the best meatloaf special. I’ve been making it for years and I gleaned the idea from my mother for stuffing the middle with cheese. I added the bacon topper and viola! The ultimate meatloaf recipe. I’m sharing it with you because it’s pretty darn tasty. Even my hubs will eat it after telling me for years he did not like meatloaf! So ya, I converted him with this recipe. Please enjoy! FYI, it also makes delicious sandwiches the next day if you’re into that sort of indulgence.

ULTIMATE MEATLOAF

Preheat oven to 400 degrees

1 lb ground beef

Ultimate Meatloaf

1/2 lb ground pork

 

1 cloves minced garlic

1/2 onion diced

1 c. chopped mushrooms

4 oz. sliced cheddar cheese

1 egg

4 slices of bacon cut in half

1/4 c. oat flour or bread crumbs

2 T. Worcestershire sauce

1 T. brown mustard

1 t. fish sauce (if you don’t have this, add 1 – 1/2 t. Johnny’s instead)

1 t. Johnny’s Seasoning Salt

1/2 t. smoked paprika

1 t. Italian seasoning

Add all ingredients to a big mixing bowl except cheese and bacon. Best way to mix is with your hands until all ingredients are blended together. Add half of meat mixture to a bread loaf sized baking pan. Lay cheese slices on top of mixture and add the rest on top. Pat it down until it’s even and lay your halved bacon slices across the top, tucking in the sides into the edges of the meat.

Bake at 400 degrees uncovered for about 60 minutes or more depending on your oven. Be careful when removing from oven because there will be hot juice! Let sit for 10 minutes before slicing and serving. Mashed potatoes are the perfect accompaniment to soak up all of the delicious melty juices.
