Recipe for Southern Corn Pudding
Ingredients
- 1/4 cup granulated sugar
- 3 Tbsp. all-purpose flour
- 2 tsp. baking powder
- 1 1/2 tsp. salt
- 6 large eggs
- 2 cups whipping cream
- 1/2 cup unsalted butter, melted
- 2 tbsp chopped chives
- 6 cups fresh corn kernels (about 12 ears)
or substitute
- 6 cups frozen whole kernel corn or canned shoepeg corn, drained.
Optional ingredients (Southwestern-style):
- 1 (5-oz.) can chopped green chiles
- 1/4 tsp. ground cumin
Directions
- Preheat oven to 350°F .

Combine the first four dry ingredients in a small bowl.

Whisk together eggs, whipping cream, and butter in a large bowl. Gradually add the sugar mixture, whisking until smooth.

Stir in the corn. To give this dish a Southwestern touch, stir in 1 (5-oz.) can of chopped green chiles and 1/4 teaspoon of ground cumin.

Add mixture to baking dish: Pour mixture into a lightly greased 13- x 9-inch baking dish.

Bake the corn pudding at 350°F for 40 to 45 minutes, or until set. Let stand 5 minutes. Garnish with chives, if desired.
