Southern Corn Pudding

Recipe for Southern Corn Pudding

Ingredients

  • 1/4 cup granulated sugar
  • 3 Tbsp. all-purpose flour
  • 2 tsp. baking powder
  • 1 1/2 tsp. salt
  • 6 large eggs
  • 2 cups whipping cream
  • 1/2 cup unsalted butter, melted
  • 2 tbsp chopped chives
  • 6 cups fresh corn kernels (about 12 ears)

or substitute

  • 6 cups frozen whole kernel corn or canned shoepeg corn, drained.

Optional ingredients (Southwestern-style):

  • 1 (5-oz.) can chopped green chiles
  • 1/4 tsp. ground cumin

 

Directions

  1. Preheat oven to 350°F .
  2.  Combine the first four dry ingredients in a small bowl.

  3.  Whisk together eggs, whipping cream, and butter in a large bowl. Gradually add the sugar mixture, whisking until smooth.

  4. Stir in the corn. To give this dish a Southwestern touch, stir in 1 (5-oz.) can of chopped green chiles and 1/4 teaspoon of ground cumin.

  5. Add mixture to baking dish: Pour mixture into a lightly greased 13- x 9-inch baking dish.

  6. Bake the corn pudding at 350°F for 40 to 45 minutes, or until set. Let stand 5 minutes. Garnish with chives, if desired.
