Nova Scotia Blueberry Cream Cake Recipe

I saw this recipe posted on Allrecipes and had to try it.

This dessert has a delicious, dense cake layer topped with a rich blueberry and sour cream mixture. Serve the cake topped with whipped cream.

You will need a 9-inch springform pan.

Ingredients

  • ½ cups all-purpose flour
  • ½ cup white sugar
  • 1 ½ teaspoons baking powder
  • ½ cup butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3 cups blueberries (rinsed and dried)
  • 2 cups sour cream
  • ½ cup white sugar
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • Whipped cream for topping

Directions

  1. Preheat the oven to 375 degrees F. Grease a 9-inch springform pan.

  2. In a medium bowl, stir together the flour, 1/2 cup of sugar, and baking powder. Mix in the butter by pinching between your fingers or using a pastry blender until the mixture resembles coarse crumbs. Stir in the egg and one teaspoon of vanilla. Pat lightly into the bottom of the prepared pan. Pour half the blueberries over the top.

  3. In another large bowl, whisk together the sour cream, 1/2 cup of sugar, egg yolks, and one teaspoon of vanilla until smooth.  Stir in the remaining blueberries. Pour the mixture over the blueberries and cake batter in the pan.

  4. Bake in the oven for 65 minutes until the top is lightly browned.  Allow the cake to cool, and then run a knife around the edge of the pan. Remove the outer ring of the pan, and cut into wedges to serve.

  5. Top with whipped cream
