Flourless Peanut Butter Cookie

With only 5 or 6 ingredients, these cookies are simple, delicious and one could almost get away with saying slightly "healthy!" No flour, so can be considered gluten free. I love sprinkling sea salt on the top and adding dark chocolate chips to give them a bit of pizazz! They're sightly more crumbly than a recipe that includes flour and butter, but I don't care...they are delicious! I doubt you will either!

Ingredients
  

  • 1 cup Creamy Peanut Butter
  • 1/2 cup Coconut Sugar
  • 1 Egg Beaten
  • 1/4 teaspoon Salt Extra Course Salt for Topping
  • 1/2 teaspoon Baking Soda
  • 1/2 cup Dark Chocolate Chips Optional

Method
 

  1. Preheat oven to 350 degrees.
  2. In a medium sized mixing bowl, stir the peanut butter, sugar, vanilla and egg, 1/4 teaspoon of salt and baking soda until well combined.
  3. Spoon 1 tablespoon of the mixture about 1 inch apart onto ungreased baking sheets. Flatten the mounds with the tines of a fork, making a crosshatch pattern on the cookies. Sprinkle coarse salt on top of the cookies.
  4. Can top with dark chocolate chips, slightly pressing into the dough.
  5.  Bake until golden around the edges, about 12 minutes. Let cool at least five minutes before eating.
