Method
Season the pork chops.
- Pat the pork chops dry with paper towels. Season both sides generously with salt and pepper, then sprinkle evenly with the garlic powder. Drying the chops first helps them develop a beautiful golden crust.
Sear until golden.
- Heat the olive oil in a large skillet over medium-high heat. Add the pork chops, making sure not to overcrowd the pan. Sear for about 3–4 minutes per side, or until nicely browned. Transfer the chops to a plate and set aside. They will finish cooking in the sauce.
Build the flavor base.
- Reduce the heat to medium and add the butter to the same skillet. Once melted, add the shallot and cook for about 2 minutes, until softened. Stir in the garlic and rosemary and cook for another 30 seconds, just until fragrant.
Make the Dijon cream sauce.
- Pour in the chicken bone broth, using a wooden spoon to scrape up all those flavorful browned bits from the bottom of the skillet. Stir in the heavy cream and Dijon mustard. Bring to a gentle simmer and cook for 3–4 minutes, until the sauce begins to thicken.
Finish the sauce.
- Stir in the Parmesan, if using, along with the lemon zest and lemon juice. Taste and adjust the seasoning with additional salt or pepper if needed.
Finish cooking the pork chops.
- Return the pork chops—and any juices that have collected on the plate—to the skillet. Spoon some of the sauce over the top and simmer gently for about 5–7 minutes, or until the pork reaches an internal temperature of 145°F at the thickest part. Remove from the heat and allow the pork to rest for at least 3 minutes before serving.
Make the gremolata
- While the pork is finishing, combine the parsley, lemon zest, and grated garlic in a small bowl. This fresh, citrusy topping is a perfect contrast to the rich cream sauce.
Toast the panko.
- Melt 1 tablespoon butter in a small skillet over medium heat. Add the panko and a pinch of salt. Cook, stirring frequently, for about 3 minutes, or until the breadcrumbs are crisp and golden brown.
Serve and enjoy.
- Place each pork chop on a plate and spoon plenty of Dijon cream sauce over the top. Finish with a sprinkle of fresh gremolata and buttery toasted panko just before serving.

Serving suggestion: This dish is delicious alongside mashed potatoes, roasted baby potatoes, buttered egg noodles, or crusty bread—anything that can soak up that wonderful Dijon cream sauce. Add roasted green beans, asparagus, or a simple salad for a complete meal.
